The perfect use for left over heavy cream.
I started making this to reduce food waste in our house. I was finding a lot of recipes requirements for heavy cream were less than the full jug. Now I just pop this one ingredient into the stand mixer and have fresh butter and butter milk rather than waste. Use it any way you would regular butter!

All you need for this recipe is heavy cream, also called whipping cream or 35% cream. Do not confuse with lesser milk fat creams like table cream (18%), or half and half (10%), as these will not give you butter.
You can use any amount to heavy cream you have as long as it is enough to be whisked by the mixer.
It is best to allow your cream to come close to room temperature before whipping, although you can use it straight from the fridge, it will just take longer to separate.
Once you have started whisking your heavy cream it will take approximately 20-30 minutes, depending on the temperature. The cream will turn to whipped cream fairly quickly and from there separate into butter and butter milk.
Once the butter starts to separate it can get messy from the buttermilk sloshing. I would suggest covering your mixer with a tea towel before it gets to this stage.
If you are unsure that it has separated you can mix for an additional few minutes without concern for the final product.
It is very important to WASH the butter. If there is butter milk left this will cause your butter to spoil faster. I like to wash mine in the coldest tap water or ice water. Change the water at least once. I ball up the butter and squish it in the water to remove excess butter milk. Some people also like to use a tea towel or cheese cloth.
If I plan to keep my butter out on the counter for toast etc. I will add salt to keep it from spoiling.

- Heavy cream – any amount available
- Salt – 1/2tsp to start
1. Add heavy cream to bowl of stand killer with whisk attachment.
2. Whisk on med-high for approximately 20-30min. Until butter separates. (See video for this process)
3. Gather separated butter and wash to remove excess butter milk.
4. Add salt buy kneeling into the butter. Add to taste, amount will vary dependent on how much butter you have made.
5. Pour buttermilk into a separate container for recipes such as buttermilk pancakes.
