Ingredients
  

  • 2 Eggs
  • 1/2 cup Milk (or non dairy substitute) I use whole
  • 1/2 cup Flour I use all purpose
  • 1 pinch Salt
  • Butter for pan
Optional flavorings
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Lemon zest
  • Icing sugar for dusting
Toppings
  • Blueberries
  • Chocolate chips
  • strawberries

Method
 

  1. Place 10-12 inch cast iron pan into oven and preheat to 475 F.
  2. Add eggs to medium bowl and whisk until light, then whisk in milk.
    2 Eggs, 1/2 cup Milk (or non dairy substitute)
  3. Add any optional flavorings if desired
    1 tsp Vanilla, 1/2 tsp Cinnamon, 1/2 tsp Nutmeg, 1 tsp Lemon zest
  4. Add flour and salt to bowl then stir until combined.

  5. Once oven is preheated, remove cast iron pan and melt butter (about 2 tbsp) in bottom, swirl to coat sides.

  6. Pour mixed batter into pan and return to oven
  7. Add desired inclusions (if any) on top of batter
    Blueberries, Chocolate chips, strawberries
  8. Bake until puffed up and light brown. About 12-15 min
  9. Remove from oven and dust with icing sugar if desired

  10. Allow to cool (puffyness will start to fall)
  11. Slice and enjoy!
