With smooth buttercream filling

- 1. Pre heat oven to 375 degrees F. Beat together butter and sugars until lightened.1 cup softened butter, 2/3 cup brown sugar, 2/3 cup maple syrup
- 2. Add egg and vanilla, and beat until combined.1 large egg, 1 1/2 tbsp vanilla
- 3. Mix together dry ingredients (leaving out oats). Slowly add to butter/egg mixture until all flour is wet.
- 4. Fold in oats.
- 5. Scoop onto cookie sheets, leaving room for them to spread, with small cookies scoop (1tbsp if available)
- 6. Bake 10-12 min at 375.
- 7. While cookies are baking, cream together butter, icing sugar, vanilla, and cream/milk until desired texture. (add more cream/milk as needed)
- 8. Scoop icing into plastic sandwich bag or piping bag. Add icing to flat side of cookie, then add another to the top to make a sandwich. Enjoy!
