Oatmeal Cream Pie Cookies

With smooth buttercream filling

Oatmeal Cream Pie Cookies

Ingredients
  

Cookies
  • 1 cup softened butter
  • 2/3 cup brown sugar
  • 2/3 cup maple syrup Or granulated sugar
  • 1 large egg
  • 1 1/2 tbsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinamon
  • dash ground clove to taste
  • 3 cups quick oats
Icing
  • 1/2 cup soft butter
  • 2+ cups icing sugar
  • 1-2 tsp vanilla
  • 1-3 tbs cream or milk the heavier the better but milk will work

Method
 

  1. 1. Pre heat oven to 375 degrees F. Beat together butter and sugars until lightened.
    1 cup softened butter, 2/3 cup brown sugar, 2/3 cup maple syrup
  2. 2. Add egg and vanilla, and beat until combined.
    1 large egg, 1 1/2 tbsp vanilla
  3. 3. Mix together dry ingredients (leaving out oats). Slowly add to butter/egg mixture until all flour is wet.
  4. 4. Fold in oats.
  5. 5. Scoop onto cookie sheets, leaving room for them to spread, with small cookies scoop (1tbsp if available)
  6. 6. Bake 10-12 min at 375.
  7. 7. While cookies are baking, cream together butter, icing sugar, vanilla, and cream/milk until desired texture. (add more cream/milk as needed)
  8. 8. Scoop icing into plastic sandwich bag or piping bag. Add icing to flat side of cookie, then add another to the top to make a sandwich. Enjoy!
