1. Pre heat oven to 375 degrees F. Beat together butter and sugars until lightened.
1 cup softened butter, 2/3 cup brown sugar, 2/3 cup maple syrup
2. Add egg and vanilla, and beat until combined.
1 large egg, 1 1/2 tbsp vanilla
3. Mix together dry ingredients (leaving out oats). Slowly add to butter/egg mixture until all flour is wet.
4. Fold in oats.
5. Scoop onto cookie sheets, leaving room for them to spread, with small cookies scoop (1tbsp if available)
6. Bake 10-12 min at 375.
7. While cookies are baking, cream together butter, icing sugar, vanilla, and cream/milk until desired texture. (add more cream/milk as needed)
8. Scoop icing into plastic sandwich bag or piping bag. Add icing to flat side of cookie, then add another to the top to make a sandwich. Enjoy!
